Open pollinated means you can save seed from your own plants and expect it to
grow “true to type” - provided it hasn’t cross-pollinated. Unlike the hybrid varieties popular today- seed from hybrids will not grow true to type - you have to buy new seed each year.
Watercress can be eaten raw or cooked. Watercress is 95% water, so has low contents of carbohydrates, protein, fat, and dietary fiber. Watercress is rich in Vitamin K, A, C, Riboflavin, Vitamin B6, Calcium and Manganese.
Watercress is a cruciferous vegetable and contains isothiocyanates that are partly destroyed by boiling*, while the bioavailability of its carotenoids is slightly increased by cooking. *Steaming retains phytochemicals better than boiling.
Being semi-aquatic, watercress is well-suited to
hydroponic cultivation, thriving best in water that is slightly
alkaline.
